SMM Recipes - Eggplant

With all the wonderful produce we had last week, I hope you picked up some items!
But what do you do with that big gorgeous eggplant? Do you always end up with soggy eggplant?

Try this recipe -- so rich + delicious you'll forget there's an eggplant anywhere about! Use it as a dip, or as a pasta sauce with penne. I usually substitute green bell peppers for the red.
